Rhubarb Lemon Fizz

2 oz. vodka
1 oz. rhubarb simple syrup*
1 oz. fresh lemon juice
Sparkling wine

Pour vodka, syrup and lemon juice into a cocktail shaker and shake vigorously.  Strain into a large iced filled glass. Top up with sparkling wine.  (For a mocktail, substitute sparkling wine with club soda or sparkling water.)

*Rhubarb Simple Syrup Recipe
1 cup water
1 cup chopped rhubarb
1/2 cup sugar

Combine all ingredients into a saucepan and bring to a boil.  Reduce heat and simmer until mixture has thickened (about 20-25 minutes). Strain into a jar, let cool and store in the refrigerator until needed.
